Mom's Oven Scrambled
Eggs
Must
bake all in the same day
No
holiday brunch in our household was complete unless it featured
mom's oven scrambled eggs.
Ingredients:
2 cups bread cubes
1 cup milk
8 slices of bacon, fried, drained and crumbled
8 eggs, scrambled very lightly in butter, salt and pepper to
taste
1/2 lb Swiss cheese, grated
1/2 Tbs butter
1/2 tsp seasoning salt
1/2 cup bread crumbs
Directions:
In
a bowl, soak bread cubes in 1 cup of milk.
Prepare bacon, crumble and set aside.
Scramble the eggs very lightly in butter.
Add the soaked bread cubes to
egg mixture and scramble till combined. Season with salt and
pepper to taste.
Pour bread cube, egg mixture
in a 1-1/2 quart greased baking dish. Sprinkle with seasoning
salt and the 1/2 lb Swiss cheese.
Saute bread crumbs in 2 Tbs butter
till light brown. Add bacon and sprinkle over the cheese.
Bake at 400° for 20 minutes
and serve or assemble ahead, refrigerate and then bake the next
day for 45 minutes. Do not bake partially one day and then
the next, must bake all in the same day.
