Cinnamon and Sugar Beauregards
1/2 cup sugar
1/3 cup soft shortening
1/2 cup milk
1-1/2 cups flour
1-1/2 tsp baking powder
1/2 tsp or less salt
1/4 tsp nutmeg
In a separate bowl:
Combine 1 cup sugar with 1-2 Tbs of cinnamon.
Set aside until muffins come out of the oven.
Melt 1/2 to 3/4 stick of butter or margarine while baking
Mix first three ingredients, then add the remaining ingredients
and mix well. Place in small muffin tins. Bake at 350° 10-12
minutes or until done.
While they are baking, melt 1/2
to 3/4 stick of margarine or butter. Roll warm, out of the oven
muffins in butter or margarine, then immediately roll in the
cinnamon and sugar mixture and let cool on a baking sheet.
