How To Make Smoked BBQ Ribs

Ingredients:

Baby Back Ribs
Mesquite Smoking Chips
Marinade (apple cider or beer)
BBQ Sauce of your choice.

Directions:
Marinate your ribs in apple cider, beer or apple juice overnight or for at least 6 hours. We marinated in apple cider because it is a good tenderizer.

Next take each of the ribs and season them with creole seasonings or dry rub of your choice - sprinkle both sides of the meat.

Pre-heat your grill and place mesquite smoking chips in 8" squared tin foil to heat on grill. The smoking chips are place on the heated burner on high heat until the temperature gets to 400° - Then drop your heat down to between low and medium.

Take the prepared ribs and place them on the grill bottom side down. There should not be any burners lit directly under the ribs. The only fire is under the mesquite chips. - You will slow cook the ribs over the indirect heat for 2-1/2 hours.

Every 30 minutes, check the meat and turn over. You can move the meat around on the grill if it seems some are cooking more than others.

At the end of the 2-1/2 hours you can then BBQ the top side of your ribs and let sit on the grill for 1-3 minutes. Then flip your ribs over and BBQ other side. You do not let them sit on the grill any longer. Just go ahead and take them off the grill and wrap them in tin foil. - They are now ready to eat.
